Miniature burgers cooked with Japanese Miyazaki A5 wagyu beef, a thin coating of gold leaf, and truffle mayonnaise are served as an amuse-bouche to kick off the evening’s meal. This is followed by a gently grilled Hokkaido scallop with parsnip purée, shaved black truffle, and bottarga foam.
Lobster Ravioli in the shape of a heart is a delicious expression of affection; it’s filling of Canadian lobster and dill goes wonderfully with the pasta’s beetroot sheets, bisque reduction, and crème fraiche.
For the main course, guests can choose a luscious Bone-In Tenderloin with grilled portobello mushroom, spinach-flavoured mashed potatoes, peppercorn cream sauce, or exquisite Atlantic Turbot sauteed with butter garlic and served with nori crisps, celeriac truffle croquette, and beurre blanc sauce. While the dishes on the menu may push the envelope, they retain a uniquely Japanese flavour and presentation as an homage to the Kintsugi philosophy and Kaiseki traditions.
